Restoring a rocking horse - will I be able to have non-leather saddle and bridle?

This might seem like a wierd question, lol. I have just purchased a vintage pegasus rocking horse which needs restoration. The mane and tail need restoration, and it currently needs a saddle and bridle as they are missing. I am wondering if a rocking horse restorer would be able to put a non-leather saddle and bridle on it? I am a vegan, so obviously do not want leather on it. Thanks!

Personally if it was me, It sounds like a fun project so I would make the saddle and tack myself. Check out the charity shops for an old coat as a source of fabric, whether you choose real or faux leather has little bearing on the process.

You can either make it plain, or if you're good, you can make it more fancy - depending on how much time you have.
