How does a milk cream separator work?
because fat is lighter than cows milk, in a centrifugal milk cream separator is it the milk(liquid) that goes to the outer areas of the bowl and the cream(solid) collecting in the centre part???

You already answered the question, didn't you?
The fat is lighter so the heavier milk gets forced to the outside. You extract the cream from the centre.
As a point of history, the first centrifugal separator was invented in Gloucestershire by Mikael Pedersen. Before that gravity was used. You leave the fresh milk for a few hours and all the cream will float to the top. Then you drain off from the base.
